What is combava?
Native to Madagascar, combava (Citrus Hystrix) is a citrus fruit combining aromas of lemongrass, ginger and coriander. It is widely used in Reunionese and Thai cuisine.
But combava zest can also be used in pastries: it goes very well with chocolate and vanilla, for example.
