Rich and indulgent, the Patisdécor madeleine mix is ideal for making regular madeleines that are soft inside and lightly crispy outside. It allows you to perfectly reproduce pastry-making expertise while offering the possibility to personalise your creations: adding inclusions, inserting a melting or runny centre, chocolate coating, etc.

Instructions:
- Mix the preparation with 80 g of melted butter and 100 g of lukewarm water using a food processor (paddle attachment).
- Mix for 1 min on low speed then 3 min on high speed.
- Pour the dough into a greased madeleine mould.
- Bake for 9 to 10 min at 180 °C (fan-assisted heat).
Measurements:
- 250 g of mix + 80 g butter + 100 g water → approximately 400 g of dough before baking
- Yield: approximately 17 standard madeleines
Usage tips:
- Preheat the oven before baking.
- Monitor the browning: the centre should remain soft.
- Allow to cool completely before turning out.
