Patisdécor sunflower lecithin (10 g) improves the airiness of yeast doughs and is widely used in molecular gastronomy: it makes it easier to create airy textures for mousses, espumas and foams. It is also an antioxidant that extends shelf life.

Sunflower lecithin is a plant-based emulsifier. It is used as an emulsifier to bind a water-based substance with a fatty one, as an antioxidant and in molecular gastronomy.

As its emulsifying effect decreases with heat, it is best used in cold liquids. It improves the airiness of yeast doughs and is widely used in molecular gastronomy: it makes it easier to create airy textures for mousses, espumas and foams. It is also an antioxidant that extends shelf life.

It can easily replace agar-agar.

Sunflower lecithin keeps for 1 year in the fridge, but it turns yellow over time and gradually loses its properties, although it can still be used.
