Knead sugar paste until smooth and elastic. Sprinkle the work surface with a little powdered sugar and roll out the fondant with a rolling pin to an even shape (2 to 3 mm thick). Turn the sugar paste by a quarter to prevent sticking. Are small cracks still visible at the edges when the fondant is rolled out? Knead again firmly until the edges are smooth when rolled out. The sugar paste is now ready to use.
