Patisdécor kappa carrageenan is a gelling / thickening agent suitable for fruits that cannot be gelled with gelatine and for making milk-based desserts.
It can be used with other gums to modify the texture.
Its gelling power is 8 times superior to that of gelatine.
Of plant origin, this gelling agent is an alternative to gelling agents of animal origin and is suitable for vegetarian and vegan diets.
Preparation:
- Pre-mix dry with other dry ingredients
- Pour the preparation into a hot liquid while stirring vigorously and maintain stirring until completely dissolved.
Setting is very rapid and gelation occurs upon cooling (from 40°C). Produces a strong, smooth and brittle gel, resistant to heat (up to 65°C).
The gel is thermoreversible: melts around 70°C. The product hydrates but only dissolves when the temperature exceeds approximately 70°C.
Recommended dosage: 0.5 to 1% per kilo of preparation.
