Gum arabic is a thickener, binder, coating agent and flavour enhancer used in confectionery for coating and to give a gelled texture, and also for the manufacture of marshmallows.
A thickener mainly used in confectionery, it provides impermeability to dragées and sweets, but is also used in the making of marshmallows and chewing pastes. It is also a flavour carrier and can be used as a thickener in dietary products.
Gum arabic is tasteless and odourless. To be incorporated into your preparation as is or diluted in hot liquid.
Dosage according to use.
Recommended dosage(s):
- Milk & ice cream: 0.4 to 0.7%
- Beverages: 0.02%
- Biscuits and pastes: 0.008% to 0.02%
- Food gum syrups: 20g/L
- Dragéification: 30 to 50% in solution
