Glucose has a lower sweetening power than sugar and a fairly viscous texture, presented as a thick and colourless syrup. In pastry-making, it is used to prevent sugar crystallisation, nougat, boiled sweets, soft caramels, fruit pastes, gums and marshmallows. It also prevents drying out of marzipan and candied fruits.
