Gelatin sheets are a natural additive that provides structure, real gelling power and a smooth mouthfeel.

Bovine gelatin sheets are made exclusively from bovine skin. Sheets of 2.5 g, 170 Bloom - 10 sheets. Gelatin contains 90% protein and contains no additives.

Gelatin enhances flavours and extends shelf life.

Usage instructions

- Soak and bloom the gelatin sheets in cold water for 5 to 10 minutes
- At the same time, heat the liquid you want to gel or thicken.
- Then incorporate the bloomed gelatin into the hot liquid without bringing to a boil
- Stir until the gelatin is dissolved.
- Refrigerate. The dish is ready to eat within 30 minutes to 4 hours.

Proportions depend on the recipe:

  • 2 to 4% by weight for creams and glazes
  • 7 to 9% for jellied eggs.

The gelling power of gelatin is measured in "bloom". The higher the bloom number on your bovine gelatin label, the stronger its gelling power.
