What is rhodoid sheet?
The rhodoid sheet is the secret to perfectly unmoulded layered cakes and beautifully glossy chocolate decorations.
Used in chocolate work, rhodoid sheets give a very glossy and smooth finish to your tempered chocolates and chocolate decorations (zigzag, waves, latticed rolls and other decorations made with piping bags or chocolate combs etc...) Its transparent and smooth surface makes it easy to remove the chocolate once it has cooled.
Used in pastry making, the Rhodoid sheet is an essential professional tool for easy assembly and unmoulding of bavarois, layered cakes, logs made from mousses and creams with impeccable edges and finish.
How to use rhodoid sheets with chocolate?
- Melt your chocolate couverture in the microwave or over a bain-marie.
- Place the transfer sheet on your work surface and create your decoration or writing with a piping bag, spatula or chocolate comb.
- Refrigerate for 5 to 10 minutes.
- Peel off.
