Also suitable for efficient ganache production.
For chocolate croissants: Add 30 g of water per 2.5 kg of dough and pipe.
Optimal storage:
Well sealed, cool and dry at 14 - 20°C
Sugar, cocoa beans shelled (35%) (Ghana), cocoa butter, dextrose, emulsifier (E322: soya lecithin).
Cocoa: 44 % minimum.
May contain traces of milk (including lactose), soya, hazelnuts, almonds.
