200 g resealable sachet of dehydrated glucose syrup (dextrose equivalent: 36-40).
Glucose syrup can be used for ice creams and ice cream, as a partial replacement for sugar. It provides greater firmness, better extrusion, longer shelf life, finer crystals and improved mouthfeel.
Dehydrated glucose syrup can also be incorporated into preparations to improve stability, such as chocolate mousses.
Dosage: 4 to 10% of total weight.
