Ammonium Bicarbonate 80 g

Ammonium bicarbonate, or simply ammonium, is used for preparing sponge cakes. Also known as "sal volatile", "baker's ammonia" and "hartshorn salt", it accelerates the leavening of quick-baking products, such as sponge cakes and biscuits.

Do not use ammonium bicarbonate for making cakes and tarts. The gases that are released must be able to escape properly.
