Directions:

Quantities for 100 g of mix:
Mixing: Pour 100 g of powder into 152 g of cold water.
Whipping: Whisk at maximum speed for 3 minutes.
Use: Use immediately in a piping bag or keep chilled.
Chef's tip: for an even richer, creamier result, the water can be replaced with an equal mix of cold water and cold milk.
