• The following process is recommended for best results: Allow sugar paste to come to room temperature. Knead firmly until smooth and elastic. Sprinkle the work surface with a little powdered sugar and roll out the sugar dough with a rolling pin into an even shape (2-3 mm thick). Turn the dough over by a quarter to prevent sticking. Are small cracks still visible at the edges when rolled out? Knead again firmly until the edges are smooth when rolled out. The sugar paste is now ready for use.
