Rock icing can be used for all kinds of pastry recipes, including cakes such as entremets, iced madeleines, ice creams, cakes, logs and mini-cakes. The advantage of rock icing is that it can be used in so many different ways that you'll never tire of it.
As well as being practical, using this rock icing is very easy. All you have to do is heat up your rocher icing in your choice of either the microwave for a maximum of 30 seconds at 750 watts, or in a bain-marie for around 5 minutes, and that's it! Your icing will be ready to use and enhance your dessert!
