Epifin Dr. Oetker is a versatile product that is particularly suitable for the preparation of fine pastries. It makes pastries light and fluffy, and improves their keeping qualities. Dosage varies according to recipe. Epifin Dr. Oetker can also be used to bind creams, sauces and fondue.
Directions for use: For pastries - if the recipe does not specify otherwise, generally replace a quarter to half of the flour with Epifin (except for leavened dough). To bind sauces - dilute Epifin in cold liquid (approx. 1 tablespoon for 2 1/2 dl sauce).
