Ever wondered what the secret is to keeping the chocolate bars in pains au chocolat from melting?

Quite simply, it's the baking-resistant chocolate used to make these baker's sticks.

They are specially designed for making pains au chocolat (chocolatines ) and viennoiseries .

What is a bâton de boulanger?

A bâton de boulanger is a bakery-safe chocolate stick (dark or milk), used in particular for pains au chocolat / chocolatines.

How to use bâtons de boulanger?

To use baker's sticks in a pain au chocolat, first roll out your puff pastry and cut it into small rectangles the width of a stick. Place 2 baker's sticks on each rectangle and roll them up to form the chocolatine. Place your pains au chocolat on a baking sheet and place in the oven.

What can I do with chocolate baker's sticks?

In addition to pains au chocolat, you can also use baker's sticks in chocolate croissants, viennoiseries, pains au lait, brioches and muffins, after breaking them into pieces. Let your imagination run wild... and your sweet tooth!

How to store baker's sticks?

Baker's sticks can be stored in a dry, odorless place away from light, between 12 and 20°C.
