Coucougnettes are handmade confectionery made in Pau, created by Francis Miot and SG Sender (Gaston Lenôtre's "Mr. Pastry Chef").< Speciality of Pau, they were thought in honor of King Henry IV, to whom historians attribute 57 mistresses and 24 children. If the name "coucougnette" evokes the things of life, to make a "coucougne" means to cuddle, cajole, pamper... in two words, to offer a "moment of love".
They pay a greedy and polite tribute to the good King Henri IV nicknamed the "Vert Galant"
