Gelatin improves the protein content of preparations without increasing the caloric value, and without adding sugar or fat.
Gelatin develops flavors and prolongs shelf life.
Directions for use
- Soak and swell gelatins in cold water for 5 to 10 minutes
- At the same time, heat the liquid you wish to gel or thicken.
- Add the swollen gelatine to the hot liquid without bringing to the boil
- Stir until the gelatine has dissolved.
- Chill in the fridge. The dish is ready to eat within 30 minutes to 4 hours.
Proportions depend on recipe:
- 2 to 4% by weight for creams and toppings
- 7 to 9% for jellied eggs.
The gelling power of gelatin is measured in "bloom". The higher the number of bloom indicated on the label of your bovine gelatin, the greater its gelling power.
