What is combava?
Native to Madagascar, combava (Citrus Hystrix) is a citrus fruit combining aromas of lemongrass, ginger and coriander. It is widely used in Reunionese and Thai cuisine.
But combava zest can also be used in patisserie: it goes very well with chocolate and vanilla, for example.
How to use combava zest
Combava zest is perfect for making cookies, cakes, ice cream, chocolate, compotes, fruit salads, savoury dishes?
To use the zest, infuse it.
Dose according to your taste, desired intensity and mood.
Do not ingest as is.
Culinary uses: pastries, confectionery, Reunionese cuisine, Thai cuisine, sauces, cocktails.
